Combine all marinade ingredients in a bowl.

Reserve half of the marinade for braising. Pour the remaining marinade over the short ribs, ensuring they’re fully coated.

Preheat the Kamado Joe to 250°F for indirect cooking.

Remove the ribs from the marinade, pat dry, and season generously with the beef rubs.

Place the ribs on the smoker and cook for 4 hours, spraying them hourly with the reserved marinade, until the internal temperature reaches 165°F.

Heat the reserved marinade in a Dutch oven on the Kamado Joe or stovetop.
