Load your grill full with lump charcoal.

Press the AFS button. The element is ON when the red light is glowing.

Leave the dome open for 10 minutes with the bottom vent fully open.

Add your wood chunk once the charcoal is ignited.

Place the heat deflector and grates on the grill.

Place the empty cast iron pan on the grill to come to temperature.

Close the dome.

Begin closing the top vent when the dome temperature is within 50°F of your target (350°F).

Mix all ingredients into a bowl. Except 2 tablespoons of Parmesan cheese.

Once your grill reaches temperature (350°F), transfer the mixture to the cast iron. Spread the mixture in the cast iron until it is even in the pain.

Sprinkle 2 tablespoons of Parmesan cheese on top.

Allow to cook for 30 minutes, stirring every 10 minutes until you achieve a golden brown, crusted, and bubbling dip.

Remove from the grill and enjoy! Scott recommends enjoying your dip with pita bread!
