      Set up the Kamado Joe for indirect cooking at 225°F with a pan underneath the pork belly to catch drippings.

      Toss in 2-3 chunks of fruit wood for smoke.

      Scare the fat cap of the pork belly lightly, taking care not to penetrate into the meat.

      Season the pork belly on all sides liberally with your favorite bbq rub.

      Smoke until thickest part of the center of the pork belly reaches 200F.

      Every two hours, mop with a mixture of 1 cup apple juice and 1/4 cup bbq rub.

      When finished, wrap pork belly in two layers of aluminum foils for 30-60 minutes to rest.
