Set up Kamado Joe for indirect heat with 2-3 chunks of fruit wood or similar mild wood and stabilize at 225F.

Remove membrane from underside of ribs by using a butter knife to peel off one corner and pulling off with a paper towel. If not, can become papery but ribs will still be great.

Liberally coat both side of the ribs with your favorite BBQ rub.

Place ribs on the smoker for 3 hours.

At the three hour mark, line two large aluminum sheets with four tbs butter, a small pour of apple juice and more BBQ rub.

Place ribs meat side down on the seasonings, wrap the ribs tightly in the aluminum foil and place back on the grill for two hours (1.5 hours for smaller racks).

After two hours, remove ribs from foil and place back on the grill, bone side down, uncovered for one hour (30 minutes for smaller racks).

Optional: pour some bbq sauce on the ribs and spread evenly for a saucier rib. After one hour, remove from heat, slice and enjoy!
