Fully Loaded Smoked Meatloaf

This recipe is not just any meatloaf; it's packed with flavor and sure to be the star of your next cookout. Combining lean ground bison, savory Italian sausage, vibrant peppers, onions, cheese curds, and smoky bacon, this meatloaf is an explosion of taste in every bite. Instructions

    Preheat your Pellet Joe smoker to 250°F.

    In a large bowl, combine the ground bison, Italian sausage, diced bell pepper, onion, poblano pepper, garlic cloves, cheese curds, bacon, bread crumbs, eggs, Worcestershire sauce, and 4 tablespoons of salt, pepper, and garlic powder. Mix well.

    Place the mixture on a cooking tray or wire rack and form it into a meatloaf shape.

    Place the meatloaf on the smoker and cook at 250°F.

    While the meatloaf is smoking, make the glaze by combining ketchup, BBQ sauce, apple cider vinegar, and 2 tablespoons of salt, pepper, and garlic powder.

    Once the internal temperature of the meatloaf reaches 140°F, generously glaze the meatloaf on all sides.

    Continue smoking the meatloaf until the internal temperature reaches 160°F.
