Bananas Foster, a legendary dessert from New Orleans’ iconic Brennan’s restaurant, gets the live fire treatment on your Kamado Joe using the Kamado Joe Paella Pan. This smoky, caramelized banana dish with rum and brown sugar is rich, buttery, and finished off with a scoop of vanilla ice cream.

    Fill your Kamado Joe with charcoal and heat to 400-425°F with the bottom and top vents fully open. Place the Kamado Joe Paella Pan directly over the heat.

    Melt the butter in the pan, stirring occasionally to prevent burning. Add the brown sugar and stir until it dissolves, creating a thick caramel syrup.

    Sprinkle in the cinnamon and mix well, letting the spice bloom in the heat. Pour in the banana liqueur to cool the caramel slightly and stir to combine.

    Peel and quarter the bananas, then add them to the pan. Coat them with the caramel sauce and let them cook for about two minutes per side until they soften and caramelize.

    Pour in the dark rum and carefully ignite it with a long lighter. Let the flames burn off naturally to cook out the alcohol while keeping the deep rum flavor.
