Slice onions into 1/2” thick rings and separate into large and small rings

Combine ground beef, shredded cheddar cheese, minced garlic, and SPG rub and mix well

Take a large sliced onion ring and fill it with the meat mixture then place a small onion ring inside of it

Wrap the onion ring with 2 slices of bacon tightly

Place assembled bacon cheeseburger onion rings back in the fridge to firm up

Fire up the Kamado Joe Classic 2 and stabilize at 300f for indirect cooking adding a wood chunk for smoke

Place onion rings on the grill and let them cook for 1 hour

Make the homemade burger sauce by combining mayonnaise, mustard, ketchup, diced sweet pickles, hot sauce, garlic powder, onion powder, paprika and Worcestershire sauce
