After 2 to 3 minutes, open the dome and create 2 sandwiches by flipping the melted sides together then flip the grilled cheese one more time on the griddle. Allow to cook for another 30 seconds and flip onto a cutting board.

Close the dome for 2-3 minutes and allow the grill flavor to set in, the cheese to melt and the bread to roast in the butter.

Season the shredded cheese with salt and pepper.

Spread 1 tablespoon butter on the griddle for each slice of bread, top the melted butter with the sliced bread. Allow the bread to soak up the butter and warm up for 1 minute then flip and top each slice of bread with ½ cup of the mixed shredded cheeses.

Stabilize your grill at 350°F. Insert the cast iron half-moon griddle accessory or medium sized cast iron pan and bring it to temperature.

Wait 1 minute and slice in half and eat right off the cutting board or transfer to a presentation plate. Enjoy!
