Stabilize your grill around 400°F. Install a soapstone or cast-iron griddle and allow it to come to temperature.

Shred the cheddar cheese.

Cut off the Brie rind and then tear the cheese into chunks, about the size of a quarter.

Melt a tablespoon of butter and place the bread on top to toast the 1st side.

Once the 1st side is toasted, flip the bread and top immediately with the cheese.

If you have not seasoned the cheese already with salt and pepper, do so.

Close the dome and allow the cheese to melt.

After 3 minutes, open the dome and place the prosciutto on the stone for a few seconds then top the cheese with it.

Flip one cheese and prosciutto-topped slice onto the other and press down just a bit to ensure the cheeses begin to melt together.
