Instructions

    Get the Kamado Joe fired up. Use fire starters and open the draft door for max airflow. Add hickory chunks once embers are glowing. Wait for clean blue smoke.

    In a saucepan, combine chicken stock, tomatoes, garlic, cumin, oregano, bay leaf, and de-seeded chilies + jalapeño. Simmer, blend with cilantro, return to the pot, and reduce.

    In a hot cast iron pan on your Kamado Joe, sauté onions, then add zucchini. Once soft, add corn, beans, cumin, and oregano. Stir in pulled pork to warm through.
