Lemon Dill Halibut with Asparagus and Bacon

Enjoy fine dining at home prepared on the Kamado Joe! Using the Karbon Steel Half Moon Pan Set make the most delicious Halibut served over grilled asparagus with bacon and finished with a lemon dill butter sauce.

Instructions

    Set up the Kamado Joe Classic II for direct heat at 400F

  2. 02

    Pat the halibut fillets dry with a paper towel and season both sides with 1/4 cup of seafood or BBQ rub

  3. 03

    Coat asparagus with 1/4 cup of olive oil and season with 1 tsp kosher salt, 1 tsp coarse black pepper and 2 minced garlic cloves

    Insert both Half Moon Karbon Steel pans into the Kamado Joe and let them preheat for 5-10 mins

  5. 05

    Add asparagus and bacon slices into one half pan and cook for 10-15 mins flipping and turning every few minutes

    Add 1/4 cup avocado oil to the other half moon pan and let the oil heat up for a few minutes

    Place the Halibut fillets into the pan and let cook for 5-6 minutes before flipping

    Cook the halibut another 5-6 minutes or until internal temperature hits 145F

    Make the lemon dill butter sauce by melting one stick of butter, 2 cloves of minced garlic cloves, juice of one lemon, and 2 tbsp minced fresh dill. Simmer for 5 minutes

    Place the halibut fillets onto a bed of the asparagus and bacon and spoon on some of the butter dill sauce
