Juicy, Smoky, and Absolutely Flavorful! This Lamb Doner Kebab (Lamb Shawarma) is marinated for 48 hours to create tender, flavorful bites infused with rich hickory smoke. Using the Masterbuilt Gravity Series 1050 Rotisserie Attachment, we achieve the perfect balance of crispy caramelized edges and juicy, melt-in-your-mouth lamb. Serve it hot off the skewer in lavash or pita bread for an authentic street-food experience!

Instructions

    Marinate the Lamb

    Slice the boneless leg of lamb into thin slices and lay them in a stainless steel tray.

    Season generously with sea salt and black pepper, then drizzle with olive oil to help bind the flavors.

    Add chopped onions on top of the meat.

    Spread yogurt evenly over the onions and lamb.

    Cover the tray with shrink wrap and marinate in the fridge for 48 hours.

  6. Prepare the Rotisserie & Smoker

    Preheat the Masterbuilt Gravity Series 1050 to 500°F.

    Add hickory wood chunks to the ash bucket for a rich smoky flavor.

    Skewer the marinated lamb onto the rotisserie attachment, stacking it tightly.

    Place the skewer in the rotisserie attachment and let the meat slowly cook until the outer layer is golden brown and caramelized.

    Every 10-15 minutes, shave off the crispy outer layers using a sharp knife. Keep rotating and slicing until all the lamb is cooked.
