Marinated overnight for maximum flavor and spun to perfection on the JoeTisserie, these wings are smoky and succulent. Paired with rosemary-infused fingerling potatoes and onions, and finished with a garlic ghee drizzle, this dish is a BBQ favorite.

Marinate chicken wings overnight in 1 cup of your marinade of choice (mojo recommended).

Set up your JoeTisserie for 350°F, with coals banked towards the back for I and II series grills, or only in the back half for the III series.

Add 1-2 wood chunks of your choice for added smoke flavor.

In a Karbon Steel pan, combine 2 lbs of fingerling potatoes, 1 roughly chopped sweet onion, 2 chopped sprigs of rosemary, 4 tablespoons of beef tallow, 3 tablespoons of extra virgin olive oil, kosher salt, and pepper.

Place the pan in the charcoal pocket, ensuring it doesn’t touch any hot parts of the grill.

Pour the marinated chicken wings into the JoeTisserie Basket.

Attach the JoeTisserie Basket to the power unit and start spinning the chicken over the potatoes and onions.

Stir the potatoes every 20-30 minutes to ensure even cooking.

The chicken will be done in about 1 hour, but it may take anywhere from 45 minutes to 1 hour and 30 minutes. The wings are ready when the skin is charred and slightly sizzling, and the potatoes are done when they start to wrinkle and char.

Melt 4 tablespoons of ghee with 4 chopped cloves of garlic over low heat for 15-20 minutes.

Drizzle the garlic ghee sauce over the chicken wings as soon as they come off the grill.

Squeeze the juice of one lemon over the wings and mix to ensure they are well coated.
