Cube the salmon into 1-inch pieces. In a large bowl, coat the salmon with Underwood Ranches Chili Garlic and generously season with Neil Sarap Tasty Asian Seasoning.

Place the salmon pieces on a sheet pan and smoke in your Kamado Joe Junior at 250°F over indirect heat until they reach an internal temperature of 135°F.

While the salmon is smoking, combine all the glaze ingredients in a bowl. Set aside 3 tablespoons of the glaze for the dipping sauce.

Once the salmon reaches 135°F, coat each piece with the glaze. Return the salmon to the smoker and continue cooking until they reach an internal temperature of 145°F.

Mix the reserved 3 tablespoons of glaze with 1/2 cup mayonnaise and 1 tablespoon Underwood Ranches Chili Garlic.

Once the salmon is done, finish with toasted sesame seeds and chopped green onions. Serve with the prepared dipping sauce.
