Making paella in your Karbon Steel™ Paella pan is a must! Before getting started, make sure you season your pan. You can learn how to do this in your owner’s manual or our How-To Season your Kamado Joe® Karbon Steel™ Pans Blog.
To use your paella pan, insert your cooking grates. Place the paella pan directly onto the grates.

Preheat your Kamado Joe® to medium-high heat, about 400°F.

Place your grill grates in the grill and place your Paella Pan on top to allow it to pre-heat.

Lightly oil your Paella Pan to refresh the seasoning and prevent sticking.

When your grill is up to temperature, add the olive oil to the pan.

Add the onions, garlic, and chicken to the pan. Cook until onions are translucent, about 10 minutes.

Add the tomatoes, peppers, bay leaves, and peas to the pan.

Add the wine and cook until liquid is almost completely cooked out. This will take about 15 minutes.

Add the rice to the pan. Cover with chicken broth. Cook for about 15 minutes or until the rice is softened.

9. Add the mussels and shrimp to the pan, scattered across the top. Cook for another 15-20 minutes. The mussels will open, and the shrimp will become opaque.
