Smoked Stuffed Jalapeno Peppers Wrapped in Bacon
jalapeno peppers that are stuffed with cheese and wrapped in bacon. Then smoked on the KJ!

25 jalapeno peppers
14 ounces of Cream Cheese
2 cups or so of finely grated cheddar or mexican cheese
Cut tops of 25 fresh jalapeno peppers off and remove seeds. Then rinse
*You can cut them in half to make the dish go further
* an vegtable peeler works well to remove seeds and veins.
mix the following
14 -16 ounces cream cheese
2 cups shredded cheddar cheese
you may add sausage if needed
2 (16 ounce) packages bacon used to wrap the jalapenos secured with a tooth pick.
smoke on the KJ for 2.5 to 3 hours at around 220 degrees. I use hickory chips
*May also want to wear a gloves while working with the peppers.
