• 4lb Boneless Pork loin ( Butterfly )
• 8oz Crumbled Blue Cheese
• 8oz Andouille Sausage or Chorizo/Hot Italian )
• 4oz Hy Vee Honey Mustard ( recommended JB’S Apple Cider Honey Mustard )
• 4oz pork season ( recommended JB’S Prem. All Purpose


In a Medium size bowl, Mix Sausage Blue Cheese 2oz. mustard and 2oz.Season. Lay out loin flat. Spoon out mix on to loin spread evenly over loin leaving App. ¾ inch from all sides. Roll up tightly like a Jelly Roll and tie with butchers twine ending with the seam down and fat side up use remaining season on outside of loin. Place in Smoker use remaining mustard drizzled or top. NOTE: Fat Side Up!! Using Apple and Pecan wood and Smoke until eternal temp of 160 degrees F. Approximately. 3 hr. Let rest 15 min. Slice and Serve over Rice and Garish with fried cinnamon apples.
